I have been in the cake-decorating business for over 25 years. I worked in the pastry department at the Peabody Hotel in Memphis after taking baking classes at Elgin Community College. I then became the pastry chef at Starved Rock Lodge and remained for 10 years creating new desserts and growing as a cake decorator.
